Instructions
Step 1: Char the eggplant whole over a flame until the skin blackens and the flesh collapses.
Step 2: Peel and mash the smoky flesh.
Step 3: Heat the vegetable oil, sizzle the cumin seeds and fry the onion with the ginger garlic paste and green chilli.
Step 4: Add the tomato, coriander powder, chilli powder and salt and cook until thick.
Step 5: Fold in the mashed eggplant, cook a few minutes more and finish with garam masala and fresh coriander.
