Instructions
Step 1: Pat the fillets very dry and season the skin generously.
Step 2: Heat oil in a pan and lay the fish skin side down, pressing flat for 20 seconds.
Step 3: Cook 5 to 6 minutes without moving until the skin releases and is crisp.
Step 4: Flip and cook 1 to 2 minutes more, then rest on a warm plate.
Step 5: Lower the heat, add butter, capers and lemon juice and swirl until foaming.
Step 6: Stir in the parsley and spoon over the fish.
Step 7: Serve with salad or steamed potatoes.
