Instructions
Step 1: Marinate the sliced beef sirloin with the cornflour, Shaoxing wine and one tablespoon of the light soy sauce.
Step 2: Sear the beef in a very hot wok with half the vegetable oil until just browned, then lift it out.
Step 3: Add the rest of the oil and the flat rice noodles and let them catch before turning.
Step 4: Add the garlic, dark soy sauce, remaining light soy sauce, oyster sauce and sugar and toss to colour the noodles.
Step 5: Return the beef with the beansprouts and spring onion and toss briefly so the sprouts stay crisp.
