Instructions

  1. Step 1: Mix the sauce: dark soy, light soy, oyster sauce and a little sugar.

  2. Step 2: Heat a wok until smoking and fry the garlic and chilli paste briefly.

  3. Step 3: Add the prawns and cook 1 minute, then push to one side.

  4. Step 4: Crack in the eggs and scramble lightly.

  5. Step 5: Add the noodles and sauce and toss hard, letting them catch on the wok.

  6. Step 6: Fold in the bean sprouts and chives and toss for 30 seconds.

  7. Step 7: Serve straight from the wok.
