Instructions
Step 1: Bring the water to a rolling boil and blanch the choy sum until the stems are just tender.
Step 2: Drain well and lay the greens on a serving plate.
Step 3: Warm the vegetable oil with the grated garlic, then stir in the oyster sauce, light soy sauce and sugar.
Step 4: Pour the sauce over the greens and serve hot.
