Instructions
Step 1: Beat the eggs with a pinch of salt.
Step 2: Heat a wok until smoking and scramble the eggs quickly, then remove them.
Step 3: Add more oil and fry the spring onion whites and peas for one minute.
Step 4: Tip in the cold rice and press it against the wok to break up clumps.
Step 5: Toss over high heat for three minutes, then return the egg.
Step 6: Season with soy sauce, white pepper and sesame oil and finish with spring onion greens.
