Instructions
Step 1: Fry the chopped white onion, garlic and dried chillies in half the vegetable oil.
Step 2: Blend with the black beans and vegetable stock until completely smooth, then season with the salt.
Step 3: Simmer the sauce until it thickens to coating consistency.
Step 4: Warm the corn tortillas in the remaining oil, dip each in the sauce and fold into quarters.
Step 5: Top with the sliced onion, crumbled queso fresco, soured cream and fresh coriander.
