Instructions
Step 1: Mix the beef chuck with the ginger paste, garlic paste, chilli powder, ground turmeric, coriander powder, cumin powder and salt.
Step 2: Heat the mustard oil until it just smokes, then fry the cardamom pods, cinnamon stick, cloves and onion until brown.
Step 3: Add the beef and sear until the moisture evaporates.
Step 4: Add the water, cover and simmer until the beef is tender.
Step 5: Uncover and keep frying, stirring often, until the sauce clings and the beef turns very dark; finish with the black pepper.
