Instructions

  1. Step 1: Boil the sugar and water with the bruised green cardamom and saffron into a light syrup and keep it warm.

  2. Step 2: Rub the ghee into the milk powder, plain flour and baking powder, then bring together with the full fat milk into a soft dough.

  3. Step 3: Roll smooth crack-free balls and rest them briefly.

  4. Step 4: Fry very gently in the vegetable oil, moving constantly, until evenly deep brown.

  5. Step 5: Drop the hot dumplings straight into the warm syrup and leave them to soak for at least an hour.
