Instructions
Step 1: Blanch the pork belly cubes in boiling water for a few minutes and drain.
Step 2: Melt the sugar in the vegetable oil until it turns amber, then add the pork and coat it.
Step 3: Add the sliced fresh ginger, spring onion, star anise and cinnamon stick.
Step 4: Pour in the Shaoxing wine, dark soy sauce, light soy sauce and water and bring to a simmer.
Step 5: Cover and braise gently until the pork is completely tender.
Step 6: Uncover and reduce the sauce until it glazes the meat.
