Instructions
Step 1: Blend the soaked rice and urad dal into a smooth batter and ferment overnight.
Step 2: Boil and roughly mash the potatoes.
Step 3: Temper mustard seeds and curry leaves in oil, add onion and green chilli and cook until soft.
Step 4: Stir in turmeric and the potatoes, season and cook 5 minutes.
Step 5: Heat a flat pan, pour a ladle of batter and spread thin in a spiral.
Step 6: Drizzle oil around the edges and cook until crisp and golden.
Step 7: Place the potato filling in the centre, fold and serve with chutney.
