Instructions
Step 1: Blanch the spinach for 2 minutes, then plunge into iced water to keep the colour.
Step 2: Blend the spinach to a smooth puree.
Step 3: Fry cumin seeds in ghee, then add onion, ginger and garlic and cook until soft.
Step 4: Stir in the tomato, turmeric and garam masala and cook until thick.
Step 5: Add the spinach puree and simmer for 6 minutes.
Step 6: Fold in the paneer and cream, season and simmer 4 minutes more.
Step 7: Serve hot with roti or rice.
