Instructions
Step 1: The night before, cover the cooked rice with the water in a clay or glass bowl and leave it covered at cool room temperature.
Step 2: In the morning, drain off a little of the water and season the rice with the salt.
Step 3: Serve in bowls topped with the sliced onion, a drizzle of mustard oil and the green chilli on the side to crush in as you eat.
