Instructions

  1. Step 1: Bring the whole milk to the boil with the bay leaf and cardamom pods in a wide heavy pan.

  2. Step 2: Add the kalijira rice and simmer, stirring often, until the rice breaks down and the milk reduces by a third.

  3. Step 3: Stir in the sugar, raisins and cashew nuts and cook 5 more minutes; serve warm or chilled.
