Instructions

  1. Step 1: Score the cleaned squid and cut it into pieces.

  2. Step 2: Fry the blended shallots and garlic in the vegetable oil until soft.

  3. Step 3: Add the chilli paste and toasted belacan and fry until the oil separates.

  4. Step 4: Stir in the tamarind paste, palm sugar, salt and water and simmer into a thick sambal.

  5. Step 5: Add the squid and the onion and cook briefly until the squid turns opaque and is just firm.
