Instructions

  1. Step 1: Fry the peeled hard boiled eggs in the vegetable oil until the skins blister, then set them aside.

  2. Step 2: Fry the shallots and garlic, then add the chilli paste and cook until the oil separates.

  3. Step 3: Stir in the tamarind paste, palm sugar and salt with a splash of water.

  4. Step 4: Return the eggs with the onion rings and simmer until coated.
