Instructions
Step 1: Simmer the eggs in the water until hard boiled, then lift them out and cool them briefly.
Step 2: Tap each shell all over so it cracks but stays on.
Step 3: Add the light soy sauce, dark soy sauce, star anise, cinnamon stick, Sichuan peppercorns, sugar, salt and black tea leaves to the water.
Step 4: Return the eggs and simmer very gently, then leave them to steep off the heat until deeply marbled.
