Instructions
Step 1: Fry the sliced fresh ginger and whole garlic cloves in the sesame oil until golden.
Step 2: Add the chicken thighs and brown them well on all sides.
Step 3: Pour in the light soy sauce, Shaoxing wine and sugar with the dried red chillies.
Step 4: Cover and braise until the chicken is cooked through and the sauce reduces to a sticky glaze.
Step 5: Stir through the Thai basil off the heat so it just wilts.
